As my blog title suggests, these pages contain a wild mix of recipes which sample a wide range of flavours and cultures. I won't even try to apply an over-arching theme to this project other than to say that every dish is about creating good food!

Spicy Island Hot Sauce

Ingredients:
  • 1 papaya
  • 1 mango
  • 1 yellow onion
  • 1 garlic
  • 4 habañero peppers
  • 1 inch fresh ginger root
  • 1/3 cup dark rum
  • 1/3 cup lime juice
  • 2 1/2 teaspoons honey
  • cardamom
  • anise
  • cloves
  • tumeric
  • nutmeg
  • cinnamon
  • black pepper

Directions:

Peel, seed and chop papaya.
Peel, pit and chop mango.
Peel and chop onion and ginger.
Peel garlic.
Stem, seed and chop peppers.
Purée all ingredients in a food processor until smooth.
Transfer mixture to a sauce pan and bring to a boil.
Simmer for ten minutes.
Remove from heat and allow to cool.
Bottle in a glass jar and refrigerate.

Garlic & Hot Pepper Corn Bread

Garlic and chili peppers add extra zing to this delicious corn bread.

Garlic & Hot Pepper Corn Bread


Ingredients:
  • 3/8 cup unsalted butter
  • 1 garlic, minced
  • 3 chili peppers, seeded and minced
  • 2 cups sweet corn kernels
  • 2 cups stone ground cornmeal
  • 1 1/4 cups unbleached flour
  • 3 1/2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups buttermilk
  • 3 large eggs, beaten
  • 1/4 cup extra virgin olive oil

Notes:

This bread is best baked in a Dutch oven. A large cast iron skillet with a lid can be used for the same purpose. I have also had success baking this recipe in a terra cotta roasting dish. If none of these options is available to you, try for other thick-walled ovenware with a tight-fitting lid.


Directions:

Preheat oven to 400°F.
Oil Dutch oven & place in oven to preheat.
Fry chilies and garlic in butter.
Combine dry ingredients and sift into a large bowl.
Combine buttermilk, eggs, olive oil, pepper mixture and corn kernels.
Add wet ingredients to dry and mix well.
Allow batter to rest for 15 minutes.
Stir batter again until well blended and pour into prepared pan.
Bake covered for 30 minutes.
Bread is finished when a toothpick inserted in the centre of the loaf comes out clean.
Cool bread in pan on wire rack, with the lid off, for 15 minutes.
Remove bread from pan.

This bread is best served fresh and warm, either straight up or spread with garlic butter. Any leftovers should be allowed to cool to room temperature, then wrapped tightly in plastic wrap. Store at room temperature and consume within 48 hours. Bread can be reheated for a few seconds in the microwave.

Zucchini and Corn Enchiladas

Here's a vegetarian derivative of my popular chicken enchiladas recipe.

Ingredients:
  • olive oil for frying and greasing pan
  • 1 garlic, peeled and diced
  • 1 large yellow onion, peeled and diced
  • 1 zucchini
  • 1 cup sweet corn kernels
  • 2 cups hot (spicy) tomato-based salsa
  • 1/2 lb aged cheddar cheese, grated
  • 10 seven-inch whole wheat tortillas
  • sour cream (to garnish)
  • guacamole (to garnish)

Directions:

Lightly grease a lasagna pan or other large casserole dish with olive oil.

Heat a small amount of oil in a large frying pan or wok.

Stir fry garlic and onion until onion turns translucent and soft.

Add zucchini and corn and stir fry until cooked through.

Add one cup of salsa, mixing well.

Remove filling mixture from the heat.

Lay one tortilla flat on a large plate or other flat surface.

Spoon a row of filling across the tortilla, about 1/3 of the way in from the near edge.

Sprinkle a small amount of grated cheese on top of the filling.

Starting at the near edge, roll up the tortilla around the filling.

Place rolled enchilada into greased casserole dish, seam side down.

Continue filling and rolling enchiladas as above until all are lined up side by side in the casserole dish.

Spread remaining salsa over top of enchiladas.

Sprinkle remaining cheese over top of salsa.

Bake at 400°F for 30 minutes, until cheese is melted and starts to brown.

Serve warm with sour cream and a side of guacamole.

Chicken Enchiladas

Last week my father was craving Mexican food and asked me to take him to Taco Bell.
I told him no. I'd make him Mexican cuisine with real food instead.
This was the result.

Ingredients:
  • olive oil for frying and greasing pan
  • 1 garlic, peeled and diced
  • 1 large yellow onion, peeled and diced
  • 1 lb chicken breast, cut into strips
  • 2 cups hot (spicy) tomato-based salsa
  • 1/2 lb aged cheddar cheese, grated
  • 10 seven-inch whole wheat tortillas
  • sour cream (to garnish)
  • guacamole (to garnish)

Directions:

Lightly grease a lasagna pan or other large casserole dish with olive oil.

Add one cup of salsa, mixing well.

Spoon a row of chicken/salsa mixture across the tortilla, about 1/3 of the way in from the near edge.

Sprinkle a small amount of grated cheese on top of the chicken/salsa.

Starting at the near edge, roll up the tortilla around the filling.

Spicy Pumpkin Soup

I just cannot get enough of thick, hearty soups in the winter time! This soup provides a double dose of heat from its warmth and its spice. It's perfect for chasing away the winter chills!

If you cannot get a hold of fresh habaneros, substitute a favourite, flavourful hot sauce such as Susie's Calypso.

Spicy Pumpkin Soup


Ingredients:
  • 1 buttercup squash
  • 1 butternut squash
  • 5 - 6 habanero peppers
  • 1 large yellow onion
  • 1 stalk celery
  • 2 carrots
  • 1 garlic
  • 2 inch piece ginger root
  • olive oil
  • 4 tablespoons honey
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon each ground: cardamom, anise, cloves, turmeric & cinnamon
  • 1 mango
  • 5 cups chicken or vegetable stock
  • 1/2 cup peanut butter*
  • 1 cup whipping cream
  • juice of one lime
  • sour cream
  • fresh cilantro

Notes/Substitutions/etc.:

* Real peanut butter is made from peanuts and nothing but.


Directions:

Wrap squash in tin foil and bake at 400°F for an hour (or more if needed).
Peel onion, garlic and ginger.
Remove stalk and seeds from habaneros.
Dice habaneros, onion, celery, carrots, garlic and ginger.
Sauté in oil until soft.
Peel and dice mango.
Cube squash, discarding skin, stringy pulp and seeds.
Place vegetables, spices, honey, mango and stock in a large pot and cook until squash is soft.
Purée soup in a blender or food processor and return to the pot.
Bring to a boil.
Stir in peanut butter, cream and lime juice.
Simmer soup for 1/2 hour or more to allow all flavours to blend nicely.
Garnish with sour cream and fresh cilantro leaves.

Jalepeño Cheddar Soup

This recipe makes a hearty, delicious, brightly coloured winter soup. The jalepeños give the soup a nice flavour, but are not the hottest peppers available. Add some of your favourite hot sauce or a few habeneros for a spicier soup.

Jalepeño Cheddar Soup


Ingredients:
  • 2 x 796 ml tins no salt added tomatoes
  • 2 red bell peppers
  • 3 cups carrots
  • 9 jalepeño peppers
  • 1-2 yellow onions
  • 2 heads oven roasted garlic
  • 1 lb aged cheddar cheese
  • basil
  • oregano
  • olive oil

Directions:

Peel onions and carrots.
Remove seeds and stalks from peppers.
Cut onions, carrots and peppers into large pieces.
Toss with olive oil in a large oven proof dish.

Roast at 400°F for 40 minutes.
Transfer roasted vegetables to a large pan or stock pot.
Add tinned tomatoes and their juices.
Add flesh of oven roasted garlics.
Season generously with basil and oregano.
Stir all ingredients together and heat to a gentle boil.
Simmer until vegetables have softened.
Purée soup in a food processor or blender.
Return puréed soup to the pan.
Finely grate cheddar cheese.
Stir cheese into soup and heat until melted.

Enjoy this soup as a meal on its own, or with a salad or a flavourful bread such as my Ancient Grains Focaccia.

Guacamole

Guacamole is a wonderful accompaniment to many Mexican dishes and a delicious and healthy chip dip. (Not that the chips themselves are all that healthy, but, if I've been working up a good sweat, and the chips are of a low-salt-as-far-as-chips-go variety, then I allow them under my Most things in moderation policy.)

Don't be shy with the hot peppers in this recipe. Avocados are known to have several important health benefits but they are a mild-tasting fruit and can really take the sting out of the jalepeños' heat.



Ingredients:
  • 2 ripe avocados, peeled & pitted
  • freshly squeezed juice from one lime
  • 2 plum tomatoes, diced
  • 1 bunch spring onions, sliced
  • 2 jalepeños, diced
  • fresh cilantro leaves, chopped

Directions:

Mash avocados with a fork.
Incorporate lime juice thoroughly.
Add remaining ingredients and mix well.
Cover and chill approximately one hour to allow flavours to blend.
Serve immediately.

Guacamole is best served fresh. I have personally eaten leftovers stored for 1-2 days in full, air-tight containers in the refrigerator -- but I don't serve this recipe to guests once it's more than a few hours old.
