Hearty greetings from the Rainbow Dragon to all visitors to my digital kitchen in the blogosphere!

As my blog title suggests, these pages contain a wild mix of recipes which sample a wide range of flavours and cultures. I won't even try to apply an over-arching theme to this project other than to say that every dish is about creating good food!

Cashew Raisin Akoori

This Persian-flavoured omelette is a delicious mix of sweet and savory.

Cashew Raisin Akoori


Ingredients:
  • 6 eggs
  • 1/4 cup roasted cashews (unsalted)
  • 2 teaspoons raw sesame oil
  • 2 hot peppers (chilies or jalapeños)
  • 1/4 cup golden raisins

Directions:

Coarsely chop cashews.
Mince chilies.
Whisk eggs.
Heat oil in a large frying pan.
Pour whisked eggs into pan.
Sprinkle minced chilies on top of eggs.
Cook for a couple of minutes until underside of omelette begins to set.
Sprinkle on raisins and nuts.
Fold omelette in half, sandwiching the filling inside.
Continue to cook until underside of omelette is lightly browned.
Flip omelette and continue cooking until the omelette is set.
Serve immediately, perhaps accompanied by rice or flatbreads for a more filling dish.
