- 500 g chicken breasts, sliced 1/4 inch thick
- 2 cups broccoli
- 1/4 cup olive oil mayonnaise
- 1/4 cup honey Dijon flavour prepared mustard
- 1 bunch green onions
- 150 g three-year-old cheddar cheese
- 50 g slivered almonds
Preheat oven to 400°F.
Blanch broccoli for 2 to 3 minutes.
Spread chicken in a single layer across the bottom of a large baking dish.
Mix the mayonnaise and mustard together in a large bowl.
Add the broccoli, onions and 2/3 of the cheese, and mix in well.
Spread mixture over the top of the chicken.
Sprinkle nuts and remaining cheese on top.
Bake at 400°F for 20 to 25 minutes.
Serve hot out of the oven with rice or potatoes.
